RECIPE: Pork and Fennel Sausage Rolls

Sausage rolls are always perfect for a garden party! We love this one from Lyttleton community member, the Pollyanna Projects.

PORK AND FENNEL SAUSAGE ROLLS

Serves; 48 minis

Prep Time 30 Mins 

Cooking time 35-40 mins

Ingredients: 

Olive Oil 

5 cloves of garlic minced 

30 grams whole fennel seeds

4 sprigs of thyme

2 peeled carrots - finely chopped 

1 brown onion - finely chopped

2 stalks of celery - finely chopped

1kg pork Mince

40 grams breadcrumbs

1tbsp Salt 

3 tsp white pepper 

6 sheets of puff pastry 

1 egg for pastry wash 

Poppy seeds 

Method:

  1. Preheat oven to 200 degrees 

  2. Heat 2 tbsp olive oil in a pan and toast fennel seeds and thyme until aromatic 

  3. Add onion, carrots and celery, cook for 20 mins, add garlic and cook for a further 3 mins, set aside to cool

  4. Add pork mince, cooked veg mix, breadcrumbs and salt & pepper into a large mixing bowl. Combine with hand until well incorporated

  5. Roll out pastry, cut sheet in half 

  6. Brush egg wash to open pastry then lay/ shape then “sausage” of the pork mixture in the middle 

  7. Roll pastry over and seal by using a fork to crimp 

  8. Apply egg wash to top and sprinkle with poppy seeds

  9. Cut to desired size and cook for 35-40 mins
