RECIPE: Spiced Citrus Marmalade cake

It is citrus season and we have lots of beautiful local oranges in store. This cake is a bit extra, it has a lot going on with spices, citrus, yogurt and marmalade. All things warming and cheering, making it a sunny, warm and moist cake to lift the spirits.

Spiced Citrus Marmalade Cake

Ingredients:

  • 2 CUPS (300G) Plain flour

  • ¾ CUP (180ML) Vegetable oil

  • 2 Eggs

  • 1 TBS Citrus rind

  • ¼ CUP (60ML) Citrus juice

  • 1 CUP (280G) Natural yogurt (can use sour cream as a substitute)

  • 1¾ CUPS (385G) Brown sugar or castor sugar

  • 2 TSP Baking powder

  • 2 TSP Turmeric

  • 2 TSP Cinnamon

  • 2 TSP Ginger

  • 4 TBS Marmalade (can use thinly sliced fresh citrus rounds)

Method:

Put everything except the marmalade in a food processor and blitz (or in a bowl and stick blend it). Put mixture into a greased +floured cake tin and sprinkle marmalade on top.
Bake in a 180 degree oven for 25-30 mins or until a skewer comes out clean.
Dust with icing sugar or drizzle with an icing sugar/citrus juice mixture if you are feeling extra sweet.
